brownie adventure #2

I used the same brownie recipe that I used for the brownie balls and made them in mini muffin cups.  I'm going to melt chocolate and 'frost' them and then add sprinkles! :)  (Halloween ones, which are even cuter).

I also put some in regular muffin cups and added a dollop of peanut butter in the middle.  Those are my real testers.  If these works, then I can add peanut butter brownies to my menu!  (I personally like the surprise in the middle better than all mixed in.. but I'll try it that way too and get some more opinions on it. :)

They are cooling, so I will report back when I get to taste one and see if the peanut butter worked! :)

taste test

So far all of the people who tasted the brownie bites LOVED them. 
I'm going to try making some with cake instead of brownies next time.

*cute story*  My mom doesn't like creamcheese frosting and so when my dad brought some home to her (he had stopped by to help me with something) he cut hers in half and took out the frosting!  How cute!  That is why they have been married for 36 years!  They are the best.

brownie are done! (but not tasted yet!)

I just realized that I left my camera at school! I will have to take pictures with my phone and then try to upload from that. Geesh.

Before I can start baking though, I have to finish cleaning the kitchen from last night's dinner! As much as I love to cook/bake, I DESPISE cleaning the kitchen! If it was up to me, everything would be disposable so there would never be a dish to wash!

brownie plans

I am planning on using the following recipe for the brownies (note that I have not yet tested this, so if it is horrid, I'll find out tomorrow)
1.5 sticks butter
2 oz baking chocolate chopped
1/4 cup and 2 tablespoons cocoa
2 cups sugar
3 large eggs
1.5 teaspoons vanilla
1 cup flour
preheat oven to 350*
line 9' pan with foil and butter
melt butter and chocolate (mix) then add in all other ingredients
bake 30-35 minutes

The cream cheese frosting that is such a hit is as follows:
1 stick butter
1 block cream cheese (I recommend getting as soft as possible without letting it get funky)
4 cups powdered sugar
1 tsp vanilla (real.. use 1.5 teaspoons if using imitation vanilla)

I mixed by hand to incorporate all the ingredients and then used the hand mixer for a few seconds at the end to get out any last lumps and to make nice and light!

I will prob make that tonight and then the brownies in the AM since I have to borrow a 9' pan from my Mom... lol.. I'm such a professional!

post one

This is my new blog!
I will be posting about my cooking adventures and linking to some of my favorite sites. I have little html knowledge, so the page will be simple until I learn more.

I started baking seriously about a year ago. I've always loved to be in the kitchen and experiment, and when I kept getting compliments on my chocolate chip cookies (which came from the recipe on the bag), I figured there was something that I was doing right with my technique!

I have a kitchen the size of a dime, so baking can get frustrating, but I find my truest enjoyment in seeing people's faces when they bite into something and say with a filled mouth, "Ohmygod this is soooo good".

I'm currently a pro in c.chip cookies, coconut macaroons (not the soft puffy ones I seem to see everywhere) and my latest and newest find, cream cheese frosting.

I have decided this weekend I'm going to attempt to make browniepops with a bit of the frosting inside! (and then dipped in chocolate). I mean seriously... could you die? YUM! Will post photos and reviews when I'm done!
